Chockfull-of-Chips Cookies


  • 1 Cup all- purpose flour
  • 1 1/2 teaspoon baking power
  • 1/4 teaspoon salt
  • 1/4 cup vegetable shortening
  • 1/2 cup firmly packed dark brown sugar
  • 1/2 cup granulated sugar
  • 1 Egg
  • 3/4 teaspoon vanilla extract
  • 1 1/2 cups semisweet chocolate chips

1. Preheat the oven to 350’F. Line the 2 baking sheets with aluminum foil.

2. In a small mixing bowl, combine the flour, baking power, and salt. Using a table fork, stir together the ingred

3. In a large mixing bowl, combine the butter, shortening, brown sugar, and granulated sugar. Using the electric mixer set on medium speed  ,beat the mixture until smooth. Turn off mixer a few times so you can scrape down the sides of the bowl with thhe rubber spatula add the egg and the vanilla and continue to beat until well blended. Add the flour mixture. Using the rubber spatula, stir until the flour is almost mixed in. Pour in the chips and stir until completely blended.

4. Using a table spoon, droop the batter in mounds onto the foil lined baking sheets, spacing the mounds about 1 1/2 inches apart.

5. PLace 1 baking sheet in the oven and bake the cookies until they they are golden brown, 12-14 minutes. Using oven mitts, remove the baking sheet from the oven and set it on a rack to cool for about 10 minuets. Carefully slide a metal spatula under each cookie and transfer it to anouther rack to cool. Repeat with the second baking sheet.

Makes about 3 Dozen cookies.
